With all the rain over the past few weeks, we're hoping that the sun and warmer temperatures (hopefully not as hot as NYC — remember, we're four hours north!) will give the fields a much-needed boost. Unfortunately, more rain is in the forecast later this week, but we’re keeping our fingers crossed for a productive window.

Highlights From This Week's Box

Song Cauliflower
A sweet, tender cauliflower with long thick stems from Asia. Great raw, roasted, or quickly stir-fried.
Gold Beets
Bright and earthy with a mellow sweetness and beautiful color that doesn’t bleed. Roast, shave raw, or pickle — and don’t toss the tops!
Fennel
Crisp and aromatic with a subtle anise flavor. Delicious shaved into salads, braised, or grilled until caramelized.

Recipe Ideas

Roasted Gold Beet & Fennel Salad with Charred Song Cauliflower

Serves 4
A warm-weather salad that combines sweet roasted beets, crisp fennel, and lightly charred Song cauliflower — finished with a lemony vinaigrette and optional crumbled feta.
Ingredients:
  • 3 medium gold beets, scrubbed and trimmed
  • 1 fennel bulb, thinly sliced (reserve fronds for garnish)
  • 1 small head Song cauliflower, cut into long florets
  • 3 tbsp olive oil, divided
  • Juice of 1 lemon
  • 1 tsp honey or maple syrup
  • Salt and pepper
  • Optional: feta or goat cheese, toasted walnuts
Instructions:
  1. Roast the beets: Wrap beets in foil or place in a covered dish. Roast at 400°F for 45–60 minutes, until tender. Let cool, then rub off skins and cut into wedges.
  2. Char the cauliflower: Toss florets with 1 tbsp olive oil, salt, and pepper. Roast or grill at high heat until lightly browned and just tender (about 10–12 minutes).
  3. Make the dressing: Whisk together lemon juice, 2 tbsp olive oil, honey, salt, and pepper.
  4. Assemble: Layer roasted beets, fennel slices, and cauliflower on a serving platter. Drizzle with dressing and toss gently.
  5. Top with crumbled cheese, fennel fronds, and walnuts if using.

Natsu Cucumber
A small, thin-skinned Japanese variety with crisp flesh and clean, refreshing flavor. Excellent raw, quick-pickled, or lightly salted to highlight its snap and subtle sweetness.
Fenugreek Greens
Tender, aromatic greens with a distinctive herbal, slightly bitter flavor — a key element in South Asian cooking. Use fresh in curries, stews, or fold into flatbreads, rice, or savory yogurt dishes.
