Fresh Chile Peppers Grown for Flavor
Chile peppers are far more diverse than simply mild, medium, or hot. Each variety has its own flavor, aroma, texture, and culinary history—from fruity and floral to smoky, earthy, citrusy, or deeply sweet.
Many of the peppers we grow are best known in their dried, pickled, powdered, or preserved forms. Tasting them freshly harvested offers an entirely different experience, revealing bright flavors and subtle characteristics that can be lost during processing.

Heat varies significantly by variety and can even differ from pepper to pepper depending on growing conditions and ripeness. Read each variety’s description for its general heat level.
Many specialty chiles are usually sold dried, pickled, powdered, or made into pastes and sauces. We harvest and ship them fresh, providing an opportunity to experience their original flavor, aroma, and texture.
Uses depend on the variety. Fresh chiles can be eaten raw, roasted, grilled, blistered, pickled, fermented, frozen, or dried to make homemade flakes and powders. See each pepper’s description for suggested uses.
Keep them dry and refrigerated. Most varieties will remain in good condition for one to two weeks, although storage life varies by variety and ripeness.
No. Different peppers ripen at different times, and quantities vary with field conditions. The varieties shown above are the ones currently available for harvest.
