Preserved at Peak Season — Pantry from the Farm
From jams and hot sauces to pickles and ferments, our pantry starts in the field. We take what’s at peak season and turn it into something lasting—sometimes in collaboration with chefs we work closely with, like our kimchi with Danny Bowien , and sometimes made entirely in our own kitchen.
Other pantry items grow out of long-standing relationships, including tomato passata with Riccardo Orfino and shatta with Chef Duncan of Empellón—all rooted in the same certified organic produce we grow for chefs and home cooks throughout the season.
Some products are planned well in advance. Others come from necessity and imagination—when a bumper crop pushes us to preserve the harvest in a new way. (Husk Cherry Jam coming soon.)
