Fresh Shelling Beans: How to Prepare, Cook & Store

Fresh shelling beans are harvested when the beans are fully developed but still tender and moist, before they are allowed to dry in the field. They have a creamy texture and delicate flavor and cook much more quickly than dried beans—no overnight soaking required.

How to Shell: Open the pods along the seam and remove the beans. The pods are not eaten. Rinse the shelled beans before cooking.

How to Cook: Simmer gently in salted water or broth until tender, typically about 20–40 minutes depending on the variety and maturity. Fresh shelling beans are wonderful simply dressed with olive oil and herbs, or added to soups, stews, salads, pastas, braises, and vegetable dishes.

How to Store: Keep the beans in their pods and refrigerated until you're ready to use them. For the best flavor and texture, use them as soon as possible after arrival.

To Freeze: Shell the beans, blanch briefly, cool completely, and freeze. It's an easy way to preserve fresh shelling beans for cooking later in the year.

To Dry: Shell the beans and spread them in a single layer in a cool, dry, well-ventilated place. Allow them to dry completely, turning occasionally, until the beans are hard and no moisture remains. Once fully dried, store in an airtight container in a cool, dark place. When you're ready to cook them, soak overnight and simmer until tender, just as you would other dried beans.
