The Japanese Vegetable Box features a curated selection of 5–8 seasonal vegetables grown from seed varieties rooted in traditional Japanese cuisine. This well-rounded assortment highlights both beloved classics and newer introductions that reflect Japan’s rich culinary heritage.
A large part of this box represents our work with Tokita Seeds, our primary partner in Japanese seed breeding and variety trials. Through the Oishii Nippon Project, we collaborate to bring vegetables bred for exceptional flavor, beauty, and authenticity. Some of this year’s new trial varieties may also be included.

Negi (Japanese Scallions)

Kabocha: Traditional, Kuri, Shokichi
Kabocha is a Japanese winter squash available in both green and red varieties, with dense, nutty, and slightly sweet flesh. Its smooth, velvety texture makes it perfect for roasting, simmered dishes, tempura, or soups. The skin is edible and adds color and visual appeal, while the rich flavor complements both savory and slightly sweet preparations. Greens & Herbs: Komatsuna, Mitsuba, Shiso, Mizuna, Tokyo Bekana, Tatsoi, or Shungiku Traditional Japanese greens and herbs. Each brings fresh flavor and a touch of texture to your dishes. They are versatile additions for salads, soups, or stir-fries.
Cabbage – “Saku Saku” - Japanese flat-head cabbage known for its crisp, juicy texture. Its tender leaves have a clean, refreshing flavor, making it ideal for pickling, slaws, or finely shredded in stir-fries. The flat shape makes it easy to store and handle, while the crunch adds a satisfying bite to any dish.
Carrots – Kyoto
Traditional Japanese carrots with a deep red color and naturally sweet, tender flesh. Their fine texture and balanced flavor make them ideal for pickling, soups, salads, or roasted dishes. Compact and flavorful, they add both color and authenticity to Japanese cuisine. These carrots are prized for their sweetness, subtle aroma, and vibrant presentation.
Japanese Cauliflower – Fioretto, Murasaki, Romanetto
These Japanese cauliflower varieties offer unique flavors, colors, and textures. Fioretto features delicate, lacy florets perfect for roasting or steaming.
