Our organic artichokes are unlike the large Globe artichokes commonly found in supermarkets. Grown as annuals in the Northeast rather than long-lived perennials, they produce beautiful compact green and purple heads with exceptionally concentrated flavor, remarkably tender leaves, and a much smaller choke surrounding a generous, richly flavored heart.
These are artichokes for people who truly love artichokes. Their smaller size isn't a compromise—it's part of what makes them so special. Much of each artichoke is edible, with tender leaves leading to one of the finest hearts you'll ever taste.
This is a fresh product for eating. We do not sell seeds or plant stock.
Why Are They Smaller?
Unlike California, where Globe artichokes are perennial plants that continue producing for several years, artichokes in the Northeast must be planted each spring and grown as annuals. Because the plants have only one growing season to mature, they naturally produce smaller heads.
The result is a completely different eating experience. Rather than oversized artichokes with thick leaves and a large fuzzy choke, our artichokes are compact, more tender, and packed with flavor. The choke is noticeably smaller, the leaves are more delicate, and a greater proportion of each artichoke can be enjoyed.
Green & Purple Varieties
We grow both traditional green and beautiful purple artichokes, each selected for exceptional eating quality rather than size. The green varieties offer the classic artichoke flavor people know and love, while the purple varieties are often even more intensely flavored with a richer, slightly sweeter, almost nutty character prized throughout Italy and southern France.
What Do They Taste Like?
Both varieties have a rich, nutty flavor with subtle sweetness, earthy complexity, and a delicate buttery finish. The fleshy bases of the leaves become wonderfully tender when cooked, while the heart is sweet, creamy, and widely considered one of the world's great vegetable delicacies.
How to Cook Organic Artichokes
- Steam whole and serve with melted butter or aioli
- Roast with olive oil, garlic, and fresh herbs
- Grill after par-cooking for smoky, caramelized flavor
- Slice into pasta, risotto, or warm vegetable dishes
- Serve alongside grilled fish, chicken, or lamb
They pair beautifully with extra virgin olive oil, lemon, garlic, parsley, thyme, butter, Parmigiano-Reggiano, Pecorino Romano, and fresh aioli.
Seasonal Availability
Fresh organic artichokes are available only for a short period each summer. Because they are grown as annuals in the Northeast, production is limited and highly seasonal, making them one of the year's most anticipated harvests.
