Fresh Calypso Beans are distinctive shelling beans known for their bold black-and-white markings, which have earned them the nicknames Orca Beans and Yin-Yang Beans. When cooked, they develop a smooth, creamy texture with a mild, slightly nutty flavor.
Unlike dried beans, fresh Calypso Beans require no soaking and generally cook in 20–30 minutes. Use them in soups, stews, braises, salads, grain dishes, or simply simmered and dressed with olive oil and herbs—or freeze them while they are in season for use throughout the year.
Please note: Calypso Beans are shipped fresh in their pods. The selected box weight includes the pods, which are not eaten.
What Do They Taste Like?
Fresh Calypso Beans have a creamy texture and a mild, earthy flavor with subtle nutty notes. They pair well with garlic, onions, tomatoes, olive oil, fresh herbs, leafy greens, roasted vegetables, grains, and flavorful broths.
The beans’ dramatic black-and-white markings may soften or fade somewhat during cooking, but their creamy interior and delicate flavor remain.
How to Use Them
- Soups and vegetable stews
- Slow-cooked braises
- Warm or chilled bean salads
- Rice, farro, and other grain dishes
- Beans with sautéed greens
- Simply simmered and dressed with olive oil and herbs
How to Prepare Them
Remove the beans from their pods and rinse. Add them to gently simmering salted water or broth and cook until tender, generally 20–30 minutes depending on their size and maturity.
Fresh Calypso Beans do not require soaking. The pods are not edible and should be discarded or composted after shelling.
Buy Now and Freeze for Later
Fresh Calypso Beans freeze well, making the larger box a useful way to stock your freezer while they are in season.
Shell the beans, blanch them briefly in boiling water, and transfer them immediately to ice water. Drain thoroughly, pack into freezer-safe containers or bags, and freeze.
Frozen Calypso Beans can be cooked much like fresh beans and used throughout the year in soups, stews, braises, salads, and grain dishes. There is no need to thaw them before cooking.
