Corno di Toro peppers are long, curved Italian sweet peppers named for their resemblance to a bull’s horn. With crisp flesh and a rich, sweet flavor, they are especially good cooked in a hot pan until their skins blister and their edges begin to caramelize.

These are classic frying peppers: sauté them with olive oil and garlic, tuck them into a sandwich, or serve them alongside sausage, chicken, beans, or grilled vegetables. A 5 lb box gives you plenty for several meals; choose 10 lb if you’re cooking for a crowd or planning to roast and preserve part of the harvest.

What Are Corno di Toro Peppers?

Corno di Toro means “bull’s horn” in Italian, a name that describes these peppers’ long, tapered shape. They are sweet peppers with no chile heat and are prized for frying, roasting, and grilling.

Unlike a thick-walled bell pepper, a Corno di Toro has an elongated shape that cooks beautifully in a skillet. You can slice it into strips or cook smaller peppers whole. Color and size may vary with the harvest.


What Do Corno di Toro Peppers Taste Like?

Fresh Corno di Toro peppers are sweet and crisp, with a full pepper flavor. Frying or roasting softens the flesh and brings out a deeper sweetness, especially where the skin blisters and lightly chars.

They need very little to make a satisfying dish: olive oil, salt, and a hot pan are enough. Garlic, herbs, vinegar, or a squeeze of lemon can be added at the end.

Slice the peppers lengthwise, remove the seeds, and cut them into broad strips. Heat olive oil in a skillet, add the peppers, and cook until they are tender with browned, blistered spots. Season with salt and serve warm or at room temperature.

For an Italian-style pepper and onion dish, cook sliced onions until soft, add the peppers, and continue cooking until everything is silky and sweet. Serve on its own, spoon over polenta, or pile into a sandwich.
