Fresh Organic French Cassoulet Beans are large, creamy shelling beans grown at Norwich Meadows Farm in New York. This Tarbais-type variety has a thin, tender skin and delicate flavor, and it absorbs the flavors of broth, herbs, tomatoes, and meats while retaining its shape.

These beans are especially well suited to cassoulet, the slow-cooked bean dish of southwestern France. Unlike dried beans, fresh shelling beans require no soaking and generally cook in 20–30 minutes.

These beans are grown in New York and are not certified Haricot Tarbais IGP beans from France. They are fresh shelling beans for cooking and eating. The pods are not edible, and we do not sell seeds or plants.

Please note: French Cassoulet Beans are shipped fresh in their pods. The selected box weight includes the pods, which are not eaten.

What Do They Taste Like?

Fresh French Cassoulet Beans have a delicate, mildly nutty flavor and an exceptionally smooth, creamy interior. Their thin skins become tender during cooking, while the large beans remain substantial enough to retain their shape.

These beans readily absorb the flavors around them. They pair especially well with garlic, onions, tomatoes, carrots, leeks, thyme, rosemary, bay leaves, duck, lamb, pork, sausage, and rich vegetable or meat stocks.

A Classic Bean for Cassoulet

This Tarbais-type bean is modeled after the large white beans traditionally used in cassoulet. Its creamy interior, tender skin, and ability to absorb rich cooking flavors make it particularly well suited to this classic French preparation.

Fresh shelling beans simplify the process because they require no soaking and cook more quickly than dried beans. They can be added to cassoulet and other braised dishes after being shelled and gently simmered until nearly tender.

How to Prepare Them

Remove the beans from their pods and rinse. Add them to gently simmering salted water or broth and cook until tender, generally 20–30 minutes depending on their size and maturity.

Fresh French Cassoulet Beans do not require soaking. The pods are not edible and should be discarded or composted after shelling.

Buy Now and Freeze for Later

Fresh French Cassoulet Beans freeze well, making the larger box a useful way to stock your freezer while they are in season.

Shell the beans, blanch them briefly in boiling water, and transfer them immediately to ice water. Drain thoroughly, pack into freezer-safe containers or bags, and freeze.

Frozen cassoulet beans can be cooked much like fresh beans and used throughout the year in cassoulet, soups, stews, braises, and salads. There is no need to thaw them before cooking.

• Order by Thursday at 12 PM EST → Ships Monday
• Order by Sunday at 12 PM EST → Ships Wednesday

Orders generally arrive the following day. If a shipping or delivery date falls on a holiday, your box will ship on the next available shipping day.
