Fresh Red Kidney Beans are classic shelling beans harvested from their pods before they are dried. When thoroughly cooked, they develop a tender, creamy interior while retaining their distinctive rich, hearty flavor.
Unlike dried kidney beans, fresh kidney beans do not require soaking. Use them in chili, soups, stews, rice dishes, salads, and other hearty preparations—or freeze them while they are in season for use throughout the year.

How to Prepare Them Safely
Remove the beans from their pods and rinse well. Place them in fresh water and bring to a full, vigorous boil. Boil vigorously for at least 10 minutes, then reduce the heat and continue cooking until the beans are completely tender.
Important: Red Kidney Beans should never be eaten raw or undercooked. Do not cook them exclusively at a low temperature or in a slow cooker. The pods are not edible and should be discarded or composted after shelling.

Fresh Red Kidney Beans freeze well, making the larger box a useful way to stock your freezer while they are in season.
Shell the beans, blanch them briefly in boiling water, and transfer them immediately to ice water. Drain thoroughly, pack into freezer-safe containers or bags, and freeze.
Frozen Red Kidney Beans can be cooked much like fresh beans and used throughout the year in chili, soups, stews, rice dishes, and salads. There is no need to thaw them before cooking, but they must still be boiled and cooked thoroughly before eating.

Orders generally arrive the following day. If a shipping or delivery date falls on a holiday, your box will ship on the next available shipping day.
