Green garlic is young garlic harvested before the bulb fully matures and cures. Rather than the papery skin and separated cloves of the garlic you know from the pantry, green garlic is tender, juicy, and entirely fresh. When very young, it resembles a slender scallion; as the season progresses, the head fills out and the stalks thicken.
Widely used in restaurant kitchens during the spring season, green garlic is valued by chefs for its flexibility and clean, layered flavor—bringing garlic character without overwhelming a dish.
What Does Green Garlic Taste Like?
Green garlic is fresh, savory, and gently pungent. It has the unmistakable character of garlic, but with more sweetness and far less bite than a dried bulb. Its flavor sits somewhere between garlic, scallion, and leek — making it especially versatile for raw preparations and lightly cooked dishes where a mature clove would overwhelm.
How to Use Fresh Green Garlic
The white and pale green portions are best for cooking. The darker green tops can be used much like scallions — sliced raw into finished dishes or stirred into sauces.
- Slice thinly and sauté in olive oil as a base for soups, beans, pasta, or grains
- Grill or roast whole until tender and caramelized
- Blend into dressings, pestos, and compound butters
