Inspired by a summer collaboration with Chef Rocco DiSpirito, this collection highlights the finest heirloom tomatoes for cooking down into rich, velvety sauces. Each variety was selected for its dense flesh, low moisture, and concentrated sweetness—qualities that allow deep flavor to develop with minimal reduction time.

What’s in the Box

Canestrino di Lucca – A Tuscan heirloom shaped like a small basket. Thick-walled, meaty, and low-seed, it cooks into a naturally sweet, dense sauce with very little additional seasoning needed.

Speckled Roman – An elongated plum tomato with striking red-and-gold marbling. Firm, low-moisture flesh and balanced acidity make it ideal for roasting and long-simmered sauces.

Piennolo del Vesuvio – A prized Neapolitan variety traditionally hung in winter clusters. Intensely sweet, tangy, and slightly smoky, these small fruits add remarkable depth and complexity to sauces.

San Marzano – The classic Italian plum tomato beloved by chefs worldwide. Silky flesh, very few seeds, and a perfect sweet-acid balance make it foundational for smooth, robust sauces.
