Heirloom Tomatoes for Sauce

Inspired by a summer collaboration with Chef Rocco DiSpirito, this collection brings together tomatoes selected for cooking into rich, velvety sauces. Their meaty texture, concentrated flavor, and balanced acidity allow them to develop depth without hours of reduction.

What’s in the Box

Canestrino di Lucca – A deeply ribbed Tuscan tomato shaped like a small basket. Thick-walled, meaty, and low in seeds, it cooks quickly into a naturally sweet, dense sauce.

Speckled Roman – An elongated paste tomato with red-and-gold marbling. Its firm, low-moisture flesh and balanced acidity make it particularly good for roasting, passata, and slow-simmered sauces.

Piennolo del Vesuvio – A Neapolitan tomato traditionally harvested in clusters and hung for extended storage. Intensely sweet and tangy, these small tomatoes add depth to sauces.

San Marzano – A classic Italian plum tomato with silky flesh, few seeds, and a balanced sweet-acid flavor. It is particularly well suited to smooth, full-flavored sauces.

Available only during tomato season and harvested to order.

We ship all produce nationwide by overnight delivery. At checkout, please select your preferred available delivery date.

Shipping Schedule:
• Order by Friday at 12 PM EST → Ships Monday
• Order by Monday at 12 PM EST → Ships Wednesday

Orders generally arrive the following day. If a shipping or delivery date falls on a holiday, your box will ship on the next available shipping day.
