Organic Radicchio & Chicories: Prepare, Enjoy & Store
Grown on our farm in Norwich, New York. Mix tender salad leaves with crisp, pleasantly bitter chicories. Each variety brings something different to your kitchen.
Wash & Prepare: Remove any damaged outer leaves and trim the base. Separate the leaves, rinse under cool running water, and dry thoroughly. For grilling or roasting, halve or quarter firm heads, keeping enough of the core intact to hold the leaves together.
For Salads: Try tender Castelfranco with pears, citrus, toasted nuts, and shaved cheese. Dress shortly before serving with olive oil and lemon or your favorite vinaigrette.
For Grilling & Roasting: Brush Treviso or other firm-headed chicories with olive oil and season with salt. Grill or roast until tender with lightly browned edges. Finish with balsamic vinegar, lemon, or Parmigiano Reggiano.
For Puntarelle: Separate the inner shoots and slice thinly lengthwise. Soak in ice water to crisp, then drain and dry before dressing. Try anchovy, garlic, olive oil, and wine vinegar, or lemon and capers. Save the outer leaves for cooking.
For the Skillet: Sauté sturdier chicory leaves with garlic and olive oil until tender. Serve alongside potatoes, stir into pasta, or add to white beans and soups.
Balance the Bitterness: Pair chicories with bright citrus, sweet fruit, rich olive oil, nuts, or cheese. Mix with tender lettuce for a gentler salad.
Keep Fresh: Refrigerate unwashed heads in a produce bag or container, protecting delicate leaves from crushing. Wash and cut shortly before use for the best texture.
