Radicchio is usually treated as a cool-weather vegetable, but properly grown summer chicories offer an entirely different kind of eating experience. At Norwich Meadows Farm, we've spent years expanding our summer and fall plantings of these remarkable vegetables. Harvested young and shipped immediately after picking, our summer chicories are exceptionally crisp, vibrant, and beautifully balanced—perfect for warm-weather cooking and fresh seasonal salads.
Each collection includes a rotating assortment of Italy's finest chicories and radicchios. Depending on the week's harvest, your box may include Castelfranco, Treviso, Sugarloaf, Puntarelle, Escarole, Frisée, Dandelion Greens, and other specialty Italian varieties grown on our farm.
Every variety offers something different—from buttery and delicate to pleasantly bitter and deeply complex. Together they create one of the most beautiful and versatile vegetable collections of the summer.

Castelfranco Radicchio
Often called the most beautiful radicchio in the world, Castelfranco features creamy yellow leaves delicately speckled with burgundy. Exceptionally mild, crisp, and slightly sweet, it's the perfect introduction to Italian chicories.
Treviso Radicchio
Long, elegant burgundy leaves with crisp white ribs. Outstanding raw, grilled, or lightly roasted, where its gentle bitterness transforms into remarkable sweetness.
Sugarloaf Chicory
One of our favorite chicories. Despite its name, Sugarloaf isn't sweet like lettuce—but among chicories it is remarkably mild. Its dense, juicy leaves stay crisp even after dressing, making it exceptional for salads, sandwiches, grilling, or even a distinctive Caesar salad.
Puntarelle
One of Rome's most celebrated vegetables, Puntarelle is prized for its crisp, hollow shoots and pleasantly bitter leaves. Traditionally served as Insalata di Puntarelle with anchovies, garlic, olive oil, and vinegar, it delivers an unmistakable crunch and refreshing flavor unlike any other chicory.
Escarole
A classic Italian kitchen staple with broad, tender leaves and a pleasantly mild flavor. Wonderful raw in salads, sautéed with garlic and olive oil, or simmered into soups and beans.
Frisée
Beautifully curled leaves with delicate bitterness and outstanding texture. A favorite of chefs for elegant salads and the classic French Salade Lyonnaise.
Dandelion Greens
Bold, peppery greens treasured throughout southern Italy. Young summer dandelions are excellent raw and equally delicious quickly sautéed with garlic, olive oil, and chili flakes.
Why Summer Radicchio?
Summer radicchio offers a completely different experience from its fall counterpart. Harvested young and incredibly fresh, the leaves are especially crisp and refreshing, with bitterness that feels bright rather than heavy. Instead of hearty winter dishes, summer chicories shine alongside tomatoes, peaches, nectarines, Carosello melons, cucumbers, berries, basil, mint, fresh cheeses, grilled vegetables, and simple vinaigrettes.
Their natural bitterness acts like seasoning, balancing rich cheeses, grilled meats, ripe fruit, and olive oil while making every ingredient around them taste brighter and more vibrant.
From Salad Bowl to Grill
Italian chicories are remarkably versatile.
- Build colorful mixed salads with peaches, tomatoes, burrata, and toasted pistachios or walnuts.
- Grill Treviso or Sugarloaf until lightly charred and finish with olive oil and Parmigiano Reggiano.
- Make a spectacular Caesar using crisp Sugarloaf instead of romaine.
- Add Frisée to composed salads for texture and elegance.
- Sauté Escarole or Dandelion Greens with garlic, olive oil, and chili flakes.
