Our wild ramps are ethically foraged by hand from wooded areas around our farm in Norwich and Chenango County, New York. Harvesting takes place only during the brief spring ramp season, when flavor is at its peak.

We offer two options"

  • Bulb & Leaf Ramps — whole plants with intact bulbs and leaves
  • Leaf-Only Ramps — sustainably harvested greens, leaving bulbs in the ground to regenerate

Ethical Ramp Harvesting

Ramps are a slow-growing native woodland plant, and responsible harvesting is essential. We never clear entire patches. Instead, we selectively harvest from established colonies—often prioritizing leaf-only harvesting, or taking a limited number of bulbs from any given area. This allows ramp populations to regenerate naturally year after year.

Our approach reflects a broader farming ethic: harvest with restraint, protect biodiversity, and think long-term.

What Are Ramps?

Ramps—also known as wild leeks—are a prized spring allium with a flavor that bridges garlic, scallions, and onions, with a distinctly green, forest-grown character.

  • Bulbs are bold, savory, and aromatic
  • Leaves are tender, fresh, and herbaceous

What Do Ramps Taste Like?

Ramps deliver deep garlicky flavor, bright spring sharpness, and a lingering savory finish. When cooked, ramps mellow and sweeten. Raw, they bring unmistakable allium heat.

How to Use Ramps

Fresh ramps are used across professional and home kitchens:

  • Sautéed with eggs, potatoes, or pasta
  • Blended into ramp butter, pesto, or salsa verde
  • Charred whole and served simply
  • Pickled to preserve the season
  • Added to stocks, broths, and ferments

Because their season is so short, many cooks preserve ramps to enjoy year-round.

Preserved Ramps (Available Year-Round)

When fresh ramps are out of season, we preserve them to capture that fleeting spring flavor. For now, you can find ramps in our pantry as Pickled Ramps.

Seasonal Availability

Fresh ramps are available for only a few weeks each spring. Quantities are limited and vary year to year based on conditions in the woods. When fresh ramps sell out, preserved ramp products are the best way to continue enjoying them.
