Adirondack Blue Potatoes have dark purple-blue skin and deep purple flesh. Developed by Cornell University for New York growing conditions, they offer excellent flavor and retain their dramatic color when cooked.

Their smooth, moist texture makes them well suited to roasting, steaming, mashing, frying, and colorful potato salads.
