Aleppo peppers are best known in the United States as soft, deep-red flakes used throughout Syrian, Turkish, and broader Middle Eastern cooking. These peppers are offered fresh from the field, with a bright, fruity flavor, gentle sweetness, and slowly building heat that differs considerably from the familiar dried spice.
Fresh Aleppo peppers can be roasted, grilled, sautéed, chopped into sauces, or preserved at home. They pair especially well with tomatoes, eggplant, lamb, chicken, beans, yogurt, garlic, citrus, and warm spices.
These are fresh peppers for cooking and eating. We do not sell seeds or plants. They are sold fresh—not dried, ground, or made into pepper flakes.
What Are Aleppo Peppers?
Aleppo peppers, also known as Halaby peppers, are named for the historic city of Aleppo in northern Syria. The ripe red peppers are traditionally partially dried, deseeded, crushed, and sometimes mixed with salt and oil to produce the soft, flavorful flakes commonly sold as Aleppo pepper.
Fresh Aleppo peppers reveal another side of the variety. They are juicy and aromatic, with a sweet, fruity flavor, subtle earthiness, and moderate heat that builds gradually rather than striking all at once. Cooking softens the heat and brings out their natural sweetness.
How to Use Fresh Aleppo Peppers
- Roast or grill and serve with olive oil, lemon, and sea salt
- Chop into tomato sauces, marinades, relishes, or vinaigrettes
- Sauté with garlic and add to eggplant, beans, lamb, or chicken
- Blend into fresh chile pastes, yogurt sauces, or dips
- Dry or preserve at home for use throughout the year
For a simple preparation, roast the whole peppers until softened and lightly charred. Remove the stems, then dress with olive oil, lemon juice, garlic, and salt. Serve with grilled meats, roasted eggplant, warm flatbread, or thick yogurt.

Fresh Aleppo peppers are available only during the summer growing season. Because this variety is usually sold dried or crushed in the United States, fresh peppers are difficult to find and availability varies with field conditions.
