Upstate Abundance Potatoes are small, round, creamy-white potatoes developed by Cornell University for New York growing conditions. Naturally petite—often around golf-ball size—they are prized for their creamy texture and rich, nutty flavor.
Their thin skin and small, uniform shape make them especially well suited to roasting whole, boiling, steaming, pan-frying, and serving in potato salads.
What Do Upstate Abundance Potatoes Taste Like?
They have a rich, nutty potato flavor and an exceptionally smooth, creamy texture. Their naturally small size gives them an excellent balance of tender flesh and flavorful skin.
How Do You Use Them?
Roast them whole with olive oil and herbs, boil or steam them for potato salads, or pan-fry them until crisp and golden. Their thin skin does not need to be peeled.
