Available in 3 lb and 5 lb Boxes · Dry and Shelled · 2026 Harvest · Ships Nationwide

Our Lima Beans are certified organic and grown on our farm in Norwich, New York. These dry, fully shelled beans are from our 2026 harvest and arrive ready to sort, rinse, soak, and cook. There are no pods included—the selected box weight is entirely dry beans.

Lima Beans are prized for their mild flavor and exceptionally creamy, buttery texture. Harvested, shelled, and dried for your pantry, they are wonderful in succotash, soups, stews, salads, casseroles, pasta, and simple vegetable dishes.

These are New York-grown dry beans sold for cooking and eating—not for use as seeds or plants.

Please note: These are dry, shelled Lima Beans. The box contains beans only—no pods—and the selected weight is the net weight of the edible dry beans.

What Do They Taste Like?

Lima Beans are mild and slightly sweet, with a smooth, creamy, and buttery texture. They pair beautifully with butter, olive oil, garlic, onions, corn, tomatoes, fresh herbs, and seasonal vegetables.

How to Use Them

  • Succotash with corn and tomatoes
  • Soups and stews
  • Warm or chilled bean salads
  • Braises and casseroles
  • Pasta and grain dishes
  • Simply simmered and dressed with olive oil and herbs

How to Prepare Them

Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.

Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time, bean age, and your preferred texture. Add more liquid as needed and season to taste.

Dry Lima Beans should always be thoroughly cooked and should never be eaten raw or undercooked.

How to Store Them

Store the dry beans in an airtight container in a cool, dry, dark place. Properly stored beans can be enjoyed throughout the year, although they generally cook most evenly when used closer to their harvest date.

Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
