Badger Flame is a remarkable specialty beet bred for sweetness, crisp texture, and significantly less earthiness than traditional red beets. Beneath its orange-red skin, the elongated root reveals brilliant golden flesh marked with irregular rings and streaks of orange and red.

Unlike most beets, Badger Flame was specifically developed to taste delicious raw. Its mild, carrot-like sweetness and crisp, juicy texture make it an exceptional choice for crudités, salads, slaws, and thinly sliced raw preparations. It is equally delicious roasted, grilled, glazed, or pickled.


What Do Badger Flame Beets Taste Like?

Badger Flame beets are unusually sweet, mild, and crisp, with far less of the strong earthy flavor associated with conventional beets. Raw, they have a juicy crunch and clean, almost carrot-like sweetness. Cooking softens their texture and deepens their natural sugars while preserving their gentle flavor.

This is an excellent beet for people who normally find traditional red beets too earthy or intense.


Why Are They Different?

Badger Flame was developed by plant breeder Dr. Irwin Goldman and his team at the University of Wisconsin–Madison. Through repeated selection, they reduced the compounds responsible for the earthiness and astringency commonly found in beets.

The variety was bred with chefs and fresh eating in mind. Its elongated shape is easy to slice and process, while its vivid flame-like interior brings striking color to both raw and cooked dishes.


How to Use Badger Flame Beets

  • Slice thinly and serve raw with citrus, olive oil, and flaky salt
  • Cut into sticks for crudités and vegetable platters
  • Shave or grate into salads and slaws
  • Roast whole or cut into wedges
  • Glaze with butter, honey, maple, or vinegar
  • Grill or char for a lightly smoky flavor
  • Quick-pickle for sandwiches, salads, and composed plates
  • Pair with yogurt, goat cheese, ricotta, citrus, herbs, or toasted nuts

The skin is tender when the beets are young, although peeling will reveal their brightest interior color.


What Gives Badger Flame Beets Their Mild Flavor?

The familiar earthy flavor of beets comes largely from a naturally occurring compound called geosmin. Badger Flame was carefully selected for lower levels of geosmin, giving it a cleaner, sweeter flavor that is particularly enjoyable raw.
