Available in 3 lb and 5 lb Boxes · Dry and Shelled · 2026 Harvest · Ships Nationwide

Our Organic Basque-Style Black Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. This dark, richly flavored Tolosana-type variety is inspired by the celebrated beans traditionally grown around Tolosa in Spain’s Basque Country.

These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.

Basque-Style Black Beans have delicate skins, creamy interiors, and a deep, earthy flavor. Use them in Basque-style bean stews, soups, braises, rice dishes, salads, or simple preparations with olive oil and vegetables.

These beans are grown in New York and are not certified Alubia de Tolosa beans from Spain. They are dry, shelled beans sold for cooking and eating—not for use as seeds or plants.

Choose Your Box Size

3 lb Box — Dry and Shelled
A practical quantity for home cooking, soups, stews, rice dishes, and individual recipes.

5 lb Box — Dry and Shelled
A larger quantity for batch cooking, entertaining, restaurant use, or stocking your pantry.

Please note: The box contains dry, shelled beans only—no pods—and the selected weight is the net weight of the edible dry beans.

What Do They Taste Like?

Basque-Style Black Beans have a deep, earthy flavor with a subtle sweetness and a smooth, creamy interior. Their delicate skins become tender during cooking, while the beans retain enough structure for slow-simmered dishes.

They pair especially well with onions, garlic, leeks, tomatoes, cabbage, olive oil, smoked paprika, chile peppers, and rich vegetable or meat broths.

The dry beans range in color from deep purple to nearly black. Their cooking liquid develops a rich, dark color and full-bodied flavor as they simmer.

Inspired by the Beans of Tolosa

Tolosa, located in Spain’s Basque Country, is renowned for a distinctive dark bean traditionally prepared in slow-simmered dishes. The beans are often served with cabbage, peppers, sausage, or other rich accompaniments.

Our Tolosana-type beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. They share the dark color, creamy texture, and full flavor associated with this Basque culinary tradition, but they are not certified Alubia de Tolosa beans from Spain.

How to Use Them

  • Basque-style black bean stews
  • Soups and slow-cooked braises
  • Beans with cabbage, onions, and peppers
  • Beans with sausage or smoked pork
  • Rice bowls and grain dishes
  • Warm or chilled bean salads
  • Simply simmered and dressed with olive oil

How to Prepare Them

Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.

Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time and your preferred texture. Add more liquid as needed and season to taste.

How to Store Them

Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.

Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
