Available in 3 lb and 5 lb Boxes · Dry and Shelled · 2026 Harvest · Ships Nationwide
Our Organic French Cassoulet Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. These large, creamy Tarbais-type beans have thin, tender skins and a delicate flavor. They readily absorb the flavors of broth, herbs, tomatoes, and savory meats while retaining their shape during slow cooking.
These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.
French Cassoulet Beans are especially well suited to cassoulet, the slow-cooked bean dish of southwestern France. Their creamy interiors and ability to absorb rich cooking flavors also make them excellent for soups, stews, braises, and salads.
These beans are grown in New York and are not certified Haricot Tarbais IGP beans from France. They are dry, shelled beans sold for cooking and eating—not for use as seeds or plants.

What Do They Taste Like?
French Cassoulet Beans have a delicate, mildly nutty flavor and an exceptionally smooth, creamy interior. Their thin skins become tender during cooking, while the large beans remain substantial enough to retain their shape.
These beans readily absorb the flavors around them. They pair especially well with garlic, onions, tomatoes, carrots, leeks, thyme, rosemary, bay leaves, duck, lamb, sausage, and rich vegetable or meat stocks.
A Classic Bean for Cassoulet
This Tarbais-type bean is modeled after the large white beans traditionally used in cassoulet. Its creamy interior, tender skin, and ability to absorb rich cooking flavors make it particularly well suited to this classic French preparation.
For cassoulet and other slow-cooked dishes, soak the dry beans before cooking and simmer them until nearly tender before combining them with the remaining ingredients. This helps the beans cook evenly while allowing them to absorb the flavors of the finished dish.
How to Use Them
- Traditional or vegetable cassoulet
- French-style bean soups and stews
- Slow-cooked braises
- Beans with duck, lamb, pork, or sausage
- Warm or chilled bean salads
- Beans with tomatoes, garlic, and herbs
- Simply simmered and dressed with olive oil
How to Prepare Them
Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.
Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time and your preferred texture. Add more liquid as needed and season to taste.
How to Store Them
Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.
Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
