Hinona Kabu is a striking, slender Japanese turnip with vivid purple shoulders that fade into creamy white tips. Crisp and juicy when raw, it has a mild sweetness followed by a distinctive peppery finish.

Unlike round salad turnips, Hinona Kabu develops a long, narrow root with a firmer, denser texture. Both the roots and leafy green tops are edible, making it a beautiful and versatile vegetable from root to leaf.

These are fresh turnips for cooking and eating. We do not sell seeds or plants.


Flavor and Texture

Hinona Kabu has a crisp, juicy texture and a more pronounced flavor than mild white salad turnips. Its initial sweetness gives way to a clean, pleasantly peppery finish reminiscent of a delicate radish.

Cooking mellows the peppery notes and brings forward the root’s natural sweetness. Its slender shape also creates an attractive presentation when the turnips are roasted whole or sliced lengthwise.


How to Use Hinona Kabu Turnips

  • Slice thinly and serve raw with sea salt, citrus, or vinaigrette
  • Quick-pickle with rice vinegar, salt, and a little sugar
  • Ferment for traditional-style Japanese pickles
  • Roast whole or halved with olive oil
  • Sauté or glaze with butter, miso, or soy sauce
  • Add to salads, grain bowls, and vegetable platters
  • Cook the leafy tops as you would mustard greens or turnip greens

Sakura-Zuke: Cherry Blossom Pickles

Hinona Kabu is traditionally used to make sakura-zuke, or “cherry blossom pickles.” When the purple-and-white roots are pickled, their natural color spreads through the turnips, producing delicate shades of pink reminiscent of cherry blossoms.

For a simple quick pickle, slice the roots diagonally or into thin rounds, lightly salt them, and dress with rice vinegar and a small amount of sugar. Allow them to rest until lightly softened while retaining their crisp texture.


Shipping

We ship on Mondays and Wednesdays. Orders placed by Thursday at 12 PM ship the following Monday; orders placed by Sunday at 12 PM ship the following Wednesday.

Because this is freshly harvested produce, availability may vary throughout the season.
