Hakurei Tokyo Turnips with Tops
About Hakurei White Tokyo Salad Turnips
Hakurei turnips are prized for their exceptional sweetness, crisp texture, and remarkable versatility. Often called White Tokyo Turnips or Salad Turnips, they are harvested with their tender greens attached and are among the first vegetables many chefs associate with spring and early summer. Every part of the plant—from root to leaf—is edible.
Available Sizes
Available in Baby or Standard sizes, packed with tops attached in 12-count or 18-count bunches.
What Are Hakurei Turnips?
Hakurei is a Japanese salad turnip bred for sweetness rather than storage. Unlike traditional turnips, these smooth white roots have virtually no bitterness and can be enjoyed raw straight from the field. Their delicate greens are equally valuable, offering a mild, spinach-like flavor that can be sautéed, wilted, or used fresh.
Their crisp texture and clean flavor have made them a favorite among chefs, who use them in everything from refined tasting menus to simple seasonal salads.
What Do They Taste Like?
Sweet, juicy, and exceptionally mild, with a crisp bite reminiscent of a radish but none of the sharp heat. Young roots are tender enough to eat whole, while larger turnips retain their sweetness and develop a slightly richer flavor when cooked.
The greens are tender, mildly peppery, and excellent cooked or raw.
How to Use Hakurei Turnips
- Serve raw with flaky salt, butter, or good olive oil
- Slice thinly for salads, crudo, or vegetable platters
- Quick pickle or ferment whole or sliced
- Roast, sauté, braise, or grill until lightly caramelized
- Marinate in a mixture of white miso, rice vinegar, mirin, and sesame oil for a classic Japanese preparation
- Wilt or sauté the greens with garlic, ginger, or butter
Hakurei turnips pair beautifully with miso, soy sauce, citrus, fresh herbs, yogurt, butter, seafood, and spring vegetables.
Why They're Different
Unlike storage turnips bred for long keeping, Hakurei turnips are grown for tenderness, sweetness, and immediate eating quality. Harvested fresh with their greens intact, they deliver exceptional texture and flavor that quickly declines with extended storage.
They've become a staple in restaurant kitchens because they require little preparation while offering both outstanding flavor and elegant presentation.
