Organic Dry Cannellini Beans

Dry and Shelled · Available in 3 lb and 5 lb Boxes · 2026 Harvest · Ships Nationwide

Our Organic Cannellini Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. Italy’s classic white bean, Cannellini Beans are prized for their delicate flavor, creamy texture, and ability to hold their shape during cooking.

These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.

Dry Cannellini Beans cook to a tender, buttery texture with a mild, gently nutty flavor. Use them in soups, pasta, braises, salads, rustic Italian dishes, or simple preparations with olive oil, garlic, rosemary, and fresh herbs.

These are dry, shelled beans grown for cooking and eating—not for use as seeds or plants.

Choose Your Box Size

3 lb Box — Dry and Shelled
A practical quantity for home cooking, soups, pasta dishes, salads, braises, and individual recipes.

5 lb Box — Dry and Shelled
A larger quantity for batch cooking, entertaining, restaurant use, or stocking your pantry.

Please note: Each box contains dry, shelled beans only—no pods—and the selected weight is the net weight of the edible dry beans.

What Do They Taste Like?

Cannellini Beans are mild, creamy, and delicately nutty. Their smooth interiors become tender and buttery during cooking, while the beans retain enough structure for soups, braises, and salads.

They pair especially well with olive oil, garlic, onions, leeks, tomatoes, rosemary, sage, parsley, leafy greens, pasta, grains, poultry, seafood, and rich vegetable or meat broths.

Their pale color and balanced flavor make them an exceptionally versatile pantry bean, equally suited to rustic preparations and refined composed dishes.

A Classic Italian White Bean

Cannellini Beans are a staple of Italian cooking and are especially associated with the rustic dishes of central Italy. Their creamy texture makes them ideal for soups, pasta dishes, braised greens, and simple preparations with olive oil and herbs.

Use them in pasta e fagioli, minestrone, Tuscan-style white bean dishes, or alongside tomatoes, bitter greens, roasted vegetables, sausage, poultry, and seafood.

How to Use Them

  • Pasta e fagioli and minestrone
  • Tuscan-style white bean soups
  • Slow-cooked braises and stews
  • Warm or chilled bean salads
  • Beans with tomatoes, garlic, or leafy greens
  • Pasta, rice, and grain dishes
  • Purées, spreads, and dips
  • Simply simmered and dressed with olive oil and herbs

How to Prepare Them

Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.

Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time, the age of the beans, and your preferred texture. Add more liquid as needed and season to taste.

For the creamiest texture, cook the beans at a gentle simmer and allow them to cool slightly in their cooking liquid. Save the flavorful liquid for soups, sauces, or reheating.

How to Store Them

Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.

Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
