Inside its leafy head, pale, hollow shoots offer a refreshing crunch and a pleasantly bitter flavor—delicious sliced thinly for salads. The outer leaves are equally useful, making flavorful cooking greens for sautés, soups, and pasta.

How to Prepare Puntarelle

Remove the outer leaves and reserve them for cooking. Trim the base, separate the inner shoots, and slice them thinly lengthwise. Soak the sliced shoots in ice water to crisp them, then drain and dry well before dressing.

For a classic Roman-style salad, toss with anchovy, garlic, extra-virgin olive oil, and wine vinegar. For an anchovy-free dressing, try lemon, capers, and olive oil.
