Organic Dry Jacob’s Cattle Beans
Dry and Shelled · Available in 3 lb and 5 lb Boxes · 2026 Harvest · Ships Nationwide
Our Organic Jacob’s Cattle Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. These traditional shelling beans are recognized by their beautiful white skins splashed with deep red or burgundy markings.
These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.
Long associated with New England cooking, Jacob’s Cattle Beans have a rich, earthy, slightly nutty flavor and creamy interiors. They retain their shape especially well, making them excellent for baked beans, soups, stews, braises, salads, and composed dishes.
These are dry, shelled beans grown for cooking and eating—not for use as seeds or plants.

What Do They Taste Like?
Jacob’s Cattle Beans have creamy interiors and a rich, earthy flavor with a pleasant nuttiness. They become tender during cooking while retaining their shape, making them especially good for dishes in which the beans should remain distinct.
They pair well with onions, garlic, tomatoes, maple syrup, molasses, mustard, sage, thyme, rosemary, smoked meats, winter squash, leafy greens, and hearty grains.
Their distinctive red-and-white markings soften during cooking, but their creamy texture and full flavor remain.
A Traditional New England Bean
Jacob’s Cattle Beans have a long association with New England cooking, where their rich flavor and ability to hold their shape make them a natural choice for slow-baked bean dishes.
Their versatility extends well beyond baked beans. Use them in soups, braises, grain dishes, salads, or simple preparations with olive oil, herbs, and seasonal vegetables.
How to Use Them
- New England-style baked beans
- Bean soups and hearty stews
- Slow-cooked braises
- Warm or chilled bean salads
- Beans with winter squash or leafy greens
- Grain bowls and side dishes
- Simply simmered and dressed with olive oil and herbs
How to Prepare Them
Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.
Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time, the age of the beans, and your preferred texture. Add more liquid as needed and season to taste.
For baked bean recipes, simmer the beans until nearly tender before combining them with your sauce and finishing them slowly in the oven.
How to Store Them
Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.
Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
