Organic Dry Borlotti Beans

Dry and Shelled · Available in 3 lb and 5 lb Boxes · 2026 Harvest · Ships Nationwide

Our Organic Borlotti Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. Also known as cranberry beans, these classic Italian shelling beans are recognized by their beautiful cream-colored beans marked with deep pink and burgundy speckles.

These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.

Dry Borlotti Beans cook to a creamy texture with a rich, earthy, and gently nutty flavor. Use them in pasta e fagioli, minestrone, soups, braises, bean salads, pasta dishes, or simple preparations with olive oil and herbs.

These are dry, shelled beans grown for cooking and eating—not for use as seeds or plants.

Choose Your Box Size

3 lb Box — Dry and Shelled
A practical quantity for home cooking, soups, stews, pasta dishes, salads, and individual recipes.

5 lb Box — Dry and Shelled
A larger quantity for batch cooking, entertaining, restaurant use, or stocking your pantry.

Please note: Each box contains dry, shelled beans only—no pods—and the selected weight is the net weight of the edible dry beans.

What Do They Taste Like?

Dry Borlotti Beans have a creamy interior and a full, earthy flavor with a subtle nuttiness. Their skins become tender as they cook, while the beans retain enough structure for soups, braises, and salads.

They pair especially well with tomatoes, garlic, onions, olive oil, rosemary, sage, leafy greens, pasta, grains, and rich vegetable or meat broths.

The beans lose much of their cream-and-burgundy pattern during cooking, but retain their creamy texture and distinctive flavor. Their cooking liquid becomes savory and full-bodied as they simmer.

A Classic Italian Bean

Borlotti Beans are widely used in Italian cooking, where their creamy texture and rich flavor make them especially well suited to pasta e fagioli, minestrone, rustic soups, and slow-simmered vegetable dishes.

Known in the United States as cranberry beans, Borlotti Beans are equally delicious served simply with olive oil and herbs or combined with tomatoes, greens, pasta, and seasonal vegetables.

How to Use Them

  • Pasta e fagioli
  • Minestrone and other soups
  • Italian-style bean stews and braises
  • Warm or chilled bean salads
  • Pasta, rice, and grain dishes
  • Beans with tomatoes, garlic, and leafy greens
  • Simply simmered and dressed with olive oil and herbs

How to Prepare Them

Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.

Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time, the age of the beans, and your preferred texture. Add more liquid as needed and season to taste.

For the creamiest texture, allow the beans to cool slightly in their cooking liquid. Save the flavorful liquid for soups, sauces, or reheating the beans.

How to Store Them

Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.

Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
