Organic Dry Flageolet Beans
Dry and Shelled · Available in 3 lb and 5 lb Boxes · 2026 Harvest · Ships Nationwide
Our Organic Flageolet Beans are certified organic and grown at Norwich Meadows Farm in Norwich, New York. A classic French shelling bean, Flageolets are prized for their delicate flavor, pale green color, and exceptionally creamy texture.
These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.
Dry Flageolet Beans cook to a smooth, creamy texture with a mild, buttery, and delicately nutty flavor. They are traditionally served with lamb but are equally delicious with poultry, seafood, vegetables, salads, and simple preparations with olive oil and herbs.
These are dry, shelled beans grown for cooking and eating—not for use as seeds or plants.

What Do They Taste Like?
Flageolet Beans are mild, buttery, and delicately nutty, with a smooth, creamy interior. Their subtle flavor makes them an excellent choice when you want the beans to complement a dish without overpowering it.
They pair especially well with lamb, poultry, seafood, garlic, shallots, leeks, carrots, tomatoes, olive oil, parsley, thyme, rosemary, and other fresh herbs.
Flageolets become tender and creamy as they simmer while retaining enough structure for salads, braises, and composed dishes.
A Classic French Bean
Flageolet Beans have a long association with French cooking and are traditionally served alongside roasted or braised lamb. Their delicate flavor and creamy texture also make them well suited to lighter preparations with poultry, seafood, vegetables, and herbs.
They can be served warm as a side dish, folded into soups and braises, or cooled and dressed with vinaigrette for a refined bean salad.
How to Use Them
- Traditional French dishes with lamb
- Soups and slow-cooked braises
- Side dishes for poultry or seafood
- Warm or chilled bean salads
- Beans with garlic, shallots, and fresh herbs
- Vegetable and grain dishes
- Simply simmered and dressed with olive oil
How to Prepare Them
Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.
Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time, the age of the beans, and your preferred texture. Add more liquid as needed and season to taste.
Cook them gently to help preserve their shape and creamy texture. Allowing the beans to cool slightly in their cooking liquid can help them absorb additional flavor.
How to Store Them
Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their flavor and cooking quality.
Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
