Available in 3 lb and 5 lb Boxes · Dry and Shelled · 2026 Harvest · Ships Nationwide

Our Organic Pescia-Style Shelling Beans are certified organic and grown on our farm in Norwich, New York. These small, flattened white beans have remarkably thin skins, creamy interiors, and a delicate flavor. This Sorana-type variety is inspired by the celebrated beans traditionally grown near Pescia in Tuscany.

These beans are from our 2026 harvest and arrive fully dried and removed from their pods. There are no pods included—the selected box weight is entirely dry beans.

Their tender skins and creamy texture make them especially good for simple Tuscan-style preparations, soups, salads, crostini, pasta, and braised dishes.

These beans are grown in New York and are not certified Fagiolo di Sorana IGP beans from Italy. They are dry, shelled beans sold for cooking and eating—not for use as seeds or plants.

Choose Your Box Size

3 lb Box — Dry and Shelled
A practical quantity for home cooking, soups, salads, pasta dishes, and individual recipes.

5 lb Box — Dry and Shelled
A larger quantity for batch cooking, entertaining, restaurant use, or stocking your pantry.

Please note: The box contains dry, shelled beans only—no pods—and the selected weight is the net weight of the edible dry beans.

What Do They Taste Like?

Pescia-Style Shelling Beans have a delicate, subtly nutty flavor and an exceptionally smooth, creamy texture. Their remarkably thin skins become tender during cooking and nearly disappear against the soft interior.

These beans are best prepared simply so their refined flavor and texture remain at the center of the dish. They pair especially well with extra-virgin olive oil, garlic, sage, rosemary, tomatoes, onions, leafy greens, crusty bread, pasta, and grilled or roasted meats.

Inspired by Sorana Beans

Sorana is a village near Pescia in Tuscany known for its prized white beans, traditionally grown in the sandy, gravelly soil along the Pescia di Pontito. The classic white Sorana bean is sometimes called a piattellino, or “little flat bean,” because of its small, flattened shape.

Our Sorana-type beans are certified organic and grown at Norwich Meadows Farm in New York. They share the flattened shape, thin skin, creamy texture, and delicate flavor associated with this Tuscan bean tradition, but they are not certified Fagiolo di Sorana IGP beans from Italy.

How to Use Them

  • Simply simmered with garlic and sage
  • Dressed with extra-virgin olive oil, salt, and pepper
  • Tuscan-style bean soups
  • White bean crostini
  • Warm or chilled bean salads
  • Pasta and grain dishes
  • Braised beans with tomatoes or leafy greens
  • Served alongside roasted or grilled meats

How to Prepare Them

Sort and rinse the dry beans before cooking. For a shorter cooking time and more even texture, cover them with plenty of water and soak overnight. Drain and rinse after soaking.

Cover the beans with fresh water or broth, bring to a boil, and then reduce the heat. Simmer gently until completely tender, generally 60–90 minutes depending on soaking time and your preferred texture. Add more liquid as needed and season to taste.

For a simple Tuscan-style preparation, simmer the beans gently with garlic, sage, and a small amount of olive oil. Once tender, season to taste and finish with additional extra-virgin olive oil.

How to Store Them

Store these dry beans in an airtight container in a cool, dry, dark place. Proper storage protects them from moisture and helps preserve their delicate flavor and cooking quality.

Cooked beans may be refrigerated in their cooking liquid in a covered container for several days. For longer storage, allow them to cool completely and freeze them with enough cooking liquid to keep them moist.
